Einkorn Sourdough Pancakes

Take your Saturday breakfast game to the next level with these Einkorn Sourdough Pancakes.  Mix the sourdough up the night before for an easy, tasty and nutritious treat that the whole family will love.

  

Properly fermented sourdough contains yeast and bacteria that work to predigest the starches in grains, thus making it easier to digest.  The long fermentation time also increases nutrients, especially B vitamins in the finished product.  Some individuals (like myself) with gluten allergies find that they can eat sourdough without any problem. 

For this recipe we replaced the all-purpose flour with Einkorn.  Einkorn is an ancient grain that is healthier and easier to digest.  It has less gluten and more nutrition than traditional whole wheat.  

We like to make a double batch of these pancakes and then place the extras in the freezer for fast and easy breakfast ideas.
