Sourdough Pizza Wheels

A childhood favorite recipe with a sourdough twist!

When I was in elementary school, my mom signed me up for a week of cooking classes at our local library. One of the recipes that I learned to make was pizza wheels. It was a quick and easy dish (which used pre-made refrigerated pizza dough) and they always seemed to be a favorite of family members. Fast forward to my late teen years and I discovered that I had a gluten intolerance. A change in diet worked, but I often longed for all of the foods I was not able to tolerate. In 2014 I had been researching sourdough and came across many articles stating that sourdough (if properly fermented) broke down the gluten so there were only traces left in the final product. I decided to give it a try and to my surprise, I was able to eat it without any issues. The next step was starting to recreate all of the foods that I hadn’t been able to eat for those nearly 15 years. Now I am able to share one of my favorite recipes from childhood with my family and you.
